Recipe: Essex Meat Layer Pudding

Ingredients:-

  • Suet Pastry made with 6 oz flour
  • 1 tablespoon butter
  • 1 teaspoon dried sage
  • salt and pepper
  • 2 medium onions, sliced
  • 1/4 teaspoon dried oregano
  • 1 tablespoon flour 8 oz minced pork
  • 1 tablespoon chopped chives
  • 2 egg yolks
  • 8oz minced chicken
  • 1/4 teaspoon celery salt
  • 2 tablespoons double cream

Method:-

  • Make the suet pastry, wrap and store in fridge for 10 mins
  • Fry onions in butter
  • Add meat, herbs, seasoning and flour
  • cook for 5 mins
  • beat eggs and cream and fold into meat
  • cook for 5 mins
  • butter 2 and 1/2 pint pudding dish
  • roll out dough 1/2 inch thick and put circle in dish
  • spoon in meat 1/2 inch thick then add alternate layers but do not fill the basin
  • cover and steam for 4 hours
