Recipe: Pork pie - Wiltshire

Ingredients:-

  • 12 oz Shortcrust pastry
  • 2-3 oz cheddar cheese, diced
  • 1/2 oz butter
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh sage
  • Salt and pepper
  • 1 onion, chopped
  • 2 rashers streaky bacon
  • 1 lb belly pork, chopped
  • 1 small cooking apple, peeled and chopped
  • Pinch of dry mustard
  • 1 egg, beaten

Method:-

  • Line a greased 9 inch pie plate
  • Fry onion and bacon in butter
  • Add pork and cook for 15-20 mins
  • Leave to cool, then stir in apple, cheese, herbs and seasoning
  • Add sufficient egg to bind mixture
  • Set oven to Gas Mark 7
  • Fill pie with mixture and add pie lid with steam hole
  • Brush with egg
  • Bake for 15 mins then reduce to Gas Mark 4 and bake for further 25-30 mins
