Ingredients:-

  • Fish - cod or hake
  • Coriander
  • Lime
  • Red chilli
  • Egg to bind
  • Green beans,
  • Brown sugar (palm sugar)
  • Red thai chilli paste - see below
  • Fish sauce
  • Kafir lime leaves

Method:-

  • Chunky fish cubed
  • Cut green leaves very finely
  • Blend fish, egg, red chillie, brown sugar, lime juice, coriander (with stalks), red chilli paste, fish sauce, lime leaves, only blend for half a minute,
  • In a bowl add the mixture, add a little bit of salt and the green beans, roll into disks and add to shallow oil. Fry until brown
  • Simple dipping Sauce
  • Sugar, vinegar, water, diced onion, red chillies, cucumber, coriander, fish sauce.

Red Chilli Paste (Harissa)



    Ingredients:-

    • 5 fresh red chillies
    • 1 Canned Plum tomatoes
    • 2 Cloves garlic
    • 1 ts Ground cumin
    • 1 ts Ground coriander
    • 1 ts Very hot chili powder
    • Vinegar


    Method:-

    • Blend all but vinegar - add vinegar at the end.
