Recipe: Courgette, baked and preserved in oil

- 1 large courgette
- Slice the courgette into 8mm rounds.
- Cover the rounds in salt.
- Leave for 30 minutes.
- Wash the salt off the rounds.
- Dry the rounds.
- Preheat the oven to Gas Mark 4
- Coat the rounds in olive oil.
- Place in oven for 30 minutes.
