  • 1 large courgette
  • Salt


  • Slice the courgette into 8mm rounds.
  • Cover the rounds in salt.
  • Leave for 30 minutes.
  • Wash the salt off the rounds.
  • Dry the rounds.
  • Preheat the oven to Gas Mark 4
  • Coat the rounds in olive oil.
  • Place in oven for 30 minutes.
