Recipe: Potato - parmesan roasted spuds

- Serves: 6675g unpeeled potatoes, cut into 2.5cm chunks2 tablespoons olive oil1 teaspoon sea salt1/4 teaspoon black pepper40g grated Parmesan cheese1/4 teaspoon dried thyme leaves
- Prep: 10 mins Cook: 1 hourPreheat an oven to 200 C / Gas 6. Place the potatoes into a mixing bowl and drizzle with olive oil. Sprinkle with sea salt, black pepper, Parmesan cheese and thyme leaves. Toss to evenly coat and transfer to a 23x33cm or similar sized baking dish. Bake in the preheated oven until the potatoes are golden brown on the edges and tender when pierced with a fork, about 1 hour. Serve hot or at room temperature.
