Ingredients:-

  • 600ml of double cream
  • Generous half teaspoon of salt

Method:-

  • Put all the cream in a food processor and use the setting 1 (of 2) to whisk the butter.
  • Keep it going for 5 minutes (or maybe a bit more if needed) until there is definite solid butter and molky buttermilk.
  • Strain of the buttermilk and use for baking.
  • Wash the butter in cold water.
  • Dry as best you can and then add salt. Mix very well.
  • Form into a block and refrigerate.
