Chop 2 hard boiled eggs and ½ pound bacon into small pieces.
Put chopped eggs and bacon in a large bowl with 1 pound bulk breakfast sausage, 1 raw egg, ¼ cup old fashioned oats, and ½ cup shredded cheese. Mix until combined.
Roll about 1 Tablespoon of mixture into a small ball and place on rimmed baking sheet.
Bake for 12-15 minutes or until the outside is golden.
Notes
For larger, ping-pong sized meatballs, bake for 20 minutes.
