To include bell peppers, we can make a delicious Turkish-style Adana Kofta.

This version uses finely minced red bell pepper directly in the meat mixture, which adds incredible sweetness, moisture, and color.



Ingredients:-

  • 500g minced meat (lamb or a beef-lamb mix)
  • 1 red bell pepper (finely minced, liquid squeezed out)
  • 1 small onion (grated, liquid squeezed out)
  • 2 garlic cloves (finely minced)
  • 1 tbsp tomato purée
  • 1 tsp red pepper flakes (or Aleppo pepper)
  • 1 tsp ground cumin
  • 1 tsp salt
  • ½ tsp black pepperInstructions

Method:-

    Prep vegetables:

    • Finely mince the red bell pepper and grate the onion.
    • Place them in a clean tea towel and squeeze out all excess liquid. This prevents the meat from falling off the skewers.

    Mix:

    • Combine the squeezed vegetables, meat, garlic, tomato purée, and spices in a bowl.
    • Knead the mixture with your hands for 5 minutes until it becomes sticky and paste-like.

    Shape:

    • Press the meat firmly onto wide metal or soaked wooden skewers into flat, elongated kebab shapes.

    Chill:

    • Place the skewers in the fridge for 30 minutes to firm up.

    Cook:

    • Grill on a hot barbecue or griddle pan for 3–4 minutes per side until charred and cooked through
