• 800g fresh plums, de-stoned
  • 125g soft light brown sugar
  • 1 level teaspoon cumin seeds
  • 1 heaped teaspoons coriander seeds
  • 6 cardamom pods
  • 1 hot chilli, deseeded and chopped very finely
  • 1/2 level teaspoon ground turmeric
  • 30g fresh root ginger, peeled and grated
  • 1/3 level teaspoon ground cloves
  • 125ml malt vinegar
  • 2 large cloves garlic, peeled and crushed with 1 rounded teaspoon salt in a pestle and mortar
  • 1 Spanish onions, peeled and finely chopped


  • De-stone the plums and chop in a food processor so the skins are too small to notice
  • Put all the ingredients in a pan and simmer until you have a sticky syrup.
  • Bottle into sterilised jars.
