Cooking time about 45 minutes.

2 tbsp Olive oil

5 cloves garlic crushed

1 chilli finely chopped

1 onion finely chopped

¼ pint white wine

1x400g can chopped tomatoes

200ml fish or vegetable or chicken stock

1 x400g bag Seafood Cocktail, defrosted

2 teaspoons Italian Herbs

Fresh ground pepper

Fresh Egg Spaghetti or dried taglitelli


Method:-

    • 1/ Heat oil and sauté garlic, chilli and onion for 5 mins until onion starting to soften
    • 2/ Add the wine and reduce for 2 minutes
    • 3/ Add tomatoes and stock and simmer for 20 minutes until sauce has reduced and thickened slightly
    • 4/ Stir in Seafood Collection, the herbs and black pepper and cook for 5 minutes until the seafood is heated through
    • 5/ Serve with spaghetti or taglitelli and top with parmesan and more black pepper
    • 6/ Serve with ciabatta bread and green salad
